= KRIGSMJÖD (War Mead) =

Krigsmjöd (krigs=war; mjöd=mead) is a fast-brewing, battle-ready, Viking-style mead. Mead and fermented honey drinks are the oldest type of brewed drink, and the addition of cranberry and lemon in this recipe gives bitter flavours that produces a beer type drink.

This is an ideal beginners brewing recipe as it's very forgiving — only yeast temperature is critical. It gives a very drinkable result that normally ends up being quite strong (around 8% abv.)

  • 5 × 450g honey
  • 2kg Dark Muscavado Sugar
  • 1 × 6g sachet of brewing yeast
  • 5 lemons
  • 1l of cranberry juice (lingonberry juice is traditional, but cranberry juce drink is easier to buy in the UK)
  • up to 30l (5 Gallons) of fresh cold water
  • White Sugar

  1. Fully sterilise all of your equipment before you begin with sodium metabisulfite. You will be leaving a sugary mix to ferment for 4 weeks, it's better if you are only introducing the bacteria that you want into that mix.

  2. Mix 500g of sugar with 1 litre of simmering water and mix until dissolved. Add to your fermentation bucket and repeat with the rest of the sugar.

  3. Mix 450g of honey with 1 litre of simmering water and mix until dissolved. Add to your fermentation bucket and repeat with the rest of the honey.

  4. Add the 1 litre of fruit juice drink to the fermentation bucket. This adds flavour, but it also contains a spiritual meaning symbolizing the blood of the [http://en.wikipedia.org/wiki/Einherjar Einherjar] (the fallen warriors who dine in [https://en.wikipedia.org/wiki/Valhalla Valhalla]).

  5. Add the contents of the sachet of yeast to room temperature (not hot) water. DO NOT add this to the fermentation bucket yet, it is too hot and it will kill the yeast and spoil the brew.

  6. Add the rest of the cold water to fill the bucket to 30 litres, which will bring the temperature down around 22­–25°C. Too hot will kill the yeast, and too cool will slow the intial fermentation.

  • If it's too warm still: wait.
  • If it's too cold: add some warm water.
  1. Add the yeast to the fermentation bucket.

  2. Wash and slice the unpeeled lemons and add the fermentation bucket. Mix it all up.

  3. Clip the top on the bucket (this stops air and unwanted germs getting in, but will still allow air out as fermentation produces carbon dioxide). If you're using a fermentation lock, fill this with water.

  4. Put the fermentation bucket somewhere warm where it can remain undisturbed for 3 weeks. If the air temperature is too cold, wrap a heated brew belt around the bucket. The ideal temperature is around 25–30°C (depending on the exact strain of yeast). Don't move the fermentation bucket during this time or it will mix up the yeast that settles to the bottom.

  5. After a day or two, you should be able to see bubbling on the surface of the mead, and it should smell like a brewery if you lift the edge of the lid. If it isn't fermenting yet, try adding 500g of white sugar to get it started and check again in a day or two.

  6. Leave the mead for at least three weeks for the primary fermentation to happen.

  7. Siphon the liquid in the fermentation bucket into a sterilised keg or bottles. If you're using bottles, only use beer bottles or plastic fizzy drinks bottles as they can handle the pressure caused by the release of CO,,2,, during secondary fermentation. Discard the last few litres of yeasty gunge.

  8. Wait for at least 1 week before drinking. Krigsmjöd is a fast brewing drink, but the flavour will continue to improve if you leave it for a few more weeks.

Dile que no:: (1) Man steps forward on the left foot, lady steps back. (3?) Man steps back and turns 90 degrees clockwise. Pulls lady across the front on 5-6-7. Standard move for swapping sides.

En chufla:: (1) Man steps back on left foot, lady steps back on right foot, man keeps left arm taut, right is free. (2) Man pulls woman back towards him and steps aside as she spins to her left. En chufla Doble:: Perform an en chufla but at end of lady's turn man places hand on lady's shoulder and pushes her back the way she came, then repeats the en chufla as normal.

Guapea:: Man holds lady's right hand in his left. No hold on other hand. (1) Man steps back, as does lady. Man swings their hands to his left and back on 1-2-3. 5-6-7 is stepping forward and pressing other hands together.

Rueda, or wheel dance:: Here multiple couples exchange partners and carry out moves syncronised by a caller.
