Performance wise OneShot and Dshot do provide much faster ESC response time. The presumable "slower" OneShot125 is good enough and there is no significant gain with any of the faster protocols. These protocols are even more sensitive to signal noise. This being said, Dshot protocol does not need any calibration which makes setup somewhat easier.
