[ENHANCEMENT] Update Perses from 0.47.0 to 0.47.1 #20

Description

Bump Perses default version to the latest version 0.47.1.

Reviewer Hint

I've regenerated the README after the bump using the make update-helm-readme.
It's a separate commit, let me know if you don't want it.
I've made also an additional commit bumping the Helm chart from 0.4.0 to 0.4.1. If you this is something don't want, I can revert the commit accordingly.
