feat(docker): create distroless final image

Distroless images have less vulnerabilities and are safer in production environments. Additionally, they will have no shell access and that reduces the attack surface even further.

Additionally, when using a slim docker image, the final image size will be reduced significantly (~200M in this case, or 22% drop)
