Update cachix url from nixos-20.09 to nixos-unstable in flake.nix

At one point in time, haskell (and thus cachix) was not guaranteed to be in the cache, and our build times were mightily escalating because of it. I guess we could build and cache it for ourselves. I'd be more inclined to merge without further testing if we just stuck a |
