Add LICENSE

I'm packaging lua-vips for debian, and MIT license requires it is actually present.
Here it is, then.

Thanks for adding the license and for doing the packaging. One question: Why did you add the year 2021 into it? The initial commit is from 2017, and MIT was already mentioned in the rockspec there, see d2bf11d.

Cool, it is now in debian/unstable: https://tracker.debian.org/pkg/lua-vips
It will percolate to testing and then be in the next debian release.
I'll probably be a user of it too, because I really like doing lua in nginx :)
