We can use this to generate a course to test LaTex/MathJax in an existing generated imscc file. Now users can see how we generate LaTeX for a course, and we can abandon the old hand-generated latex.imscc file.

Again, it may be best to expand the contents of canvas_cc_gem_course.imscc. @akozma89
