Noticed while releasing https://github.com/glencoesoftware/omero-ms-thumbnail/releases/tag/v0.5.9, the existing Docker-based GitHub workflow started failing with a Gradle exception.
As we have done in other projects, this replaces this workflow by a matrix GitHub workflow running the builds against all supported LTS versions of Java and archiving the build artifacts. The Gradle wrapper is upgraded to the latest version (8.8) to support building under Java 21 LTS.
The Appveyor workflow is redundant and removed in favor of this new workflow and the README is updated.
