Updates ATF to the latest Flow protocol from
estuary/flow#1787, which includes information about array fields in projection inference.

See also #321 where I did the same thing to update ATF for the addition of numeric inference.

Converted this back to a draft since I need to figure out how to get the build to succeed...

Fixed now. None of the test failures seem significant and are related to us having an imported etc. connector in our main connectors repo now. At this point I'm not even sure which of these ATF connectors are even in active use, but I assume there must still be a few that haven't been ported over.
