Thanks for creating this PR. Yes, I agree to remove this content.
This was discussed in #183 and mostly all tutorial-specific content now lives in the tutorial-website. If we need workshop websites in the future we will use blog posts instead, as discussed in #193. For the record, I linked this issue in the corresponding tutorial website to reuse any of this material epiverse-trace/git-rstudio-basics#69

This PR removes some seemingly unused resources.
@avallecam can you confirm the learn materials are okay to remove here, as they now live elsewhere? I could not find any links or inclusions on the learn page.
