Removes vulnerable dependency (vite-plugin-eslint)
Description of Changes
This PR removes the dependency
vite-plugin-eslint. The dependency hasn't been updated for two years and now includes a vulnerable dependency. Removing this dependency does not change the linting in the CI or the local linting. The only thing that won't happen anymore is seeing linting issues in the browser when developing using vite.
