- change letsencrypt to geerlingguy.certbot - add geerlingguy.docker to install docker-compose - remove platform limitation
- update greenlight to v3 - fix FQDN for module names - reorganize tasks for more overview - change environment variables to v3 - add redis for more speed

By trying to install there come up some issues with the used dependencies and tasks for v2 greenlight. This pull request will fix the issues by deprecated naming conventions and old dependencies.
The role: thefinn93.letsencrypt is not updatet scince 3 Years now, switch to geerlingguy.certbot. Also add the geerlingguy.docker role to install docker-compose, this role is used by the active ansible-role-bigbluebutton project.
