Add tutorial for mono dl1b to dl2 and update docs

• This adds a tutorial for using the tools to process dl1b files to dl2 for monoscopic analysis (based on http://cta-computing.gitlab-pages.cta-observatory.org/dpps/datapipe/datapipe/latest/user-guide.html).
• It also updates the api and user-guide docs for the tools and removes a unnecessary file in the user-guide for the data model.

Since there are only very minor changes in the code itself, do we need a changelog here?
