Managing long term, semi permanent bookings

I would like to use/enhance CiviBooking for the following situation:

The organization has a number of resources that have been booked on a permanent basis by a particular contact. Therefore that resource needs to be marked as "unavailable" every Monday forever. However, occasionally that contact will not need the resource, so there needs to be a mechanism to mark that resource as available on Monday, December 29, 2014. (But unavailable on all other Mondays)

Any ideas on how to structure this?
