Also adds a 🥬doc config file, even though the generated docs are currently not automatically built / deployed anywhere.
Before releasing this, we should consider shortening the CMake option values for
SIMSYCL_CHECK_MODEfrom=SIMSYCL_CHECK_ABORTto=ABORTetc - this feels a bit rough at the moment.I also figured out how to show the logo at a proper size without any hacks.
