- ½ eetlepel paprikapoeder | ||
- 400 gram gegrilde groente (courgette, paprika & ui) uit de diepvries | ||
- 1 blik gezeefde tomaten | ||
- 1 eetlepel italiaanse kruiden | ||
- 500 milliliter groentebouillon | ||
- 50 gram groene olijven | ||
- 200 gram feta | ||
- 1 theelepel peterselie | ||
- 1 citroen | ||

- Bak de risotto 2 minuten in een hapjespan met wat olie | ||
- Meng het bouillonblokje met het water | ||
- Meng de paprikapoeder, italiaanse kruiden, groenten, de bouillon en de gezeefde tomaten met de risotto | ||
- Breng dit zonder deksel op de pan aan de kook en laat dit 25 minuten staan | ||
- Snij de feta in plakken | ||
- Bak dit in 1,5 minuten per kant | ||
- Laat de olijven uitlekken | ||
- Snij de citroen in partjes | ||
- Meng de risotto met de olijven, feta en de peterselie | ||
- Breng op smaak met peper en zout | ||
- Serveer met de plakjes citroen | ||
