The standalone JAR variant includes all the required dependencies and is probably the way to go if you have java installed.
mule-metadata-extractor-linux-amd64-v1.0.14 is a binary created with GraalVM's native image feature. It should start up much faster compared to the jars and does not require a JVM but should be considered experimental until it has been tested more thoroughly.
