My thinking was that I want to force students to use incremental loading to get experience with that complexity, but now wondering if that's overly prescriptive. Thoughts?

I agree. I think it's better to have students decide which is the most appropriate method given their data and dashboard characteristics. For example, Hiro told me that "Given the nature of our data, incremental loading isn't necessary, and since the dataset is so large, detecting differences could increase unnecessary processing." I told him this seems Ok to me.
