2.1.0 - Dependencies upgrade

The dependencies were old and full of CVEs.
Now they are all upgraded to the latest.
Except for JDOM, which would need to be migrated to 2.x. But, JDOM is an abandoned project, and it doesn't make much sense to migrate to it.
