Use dependencies from lockfile rather than environment.yml file.
Conda/mamba can't install from conda-lock.yml directly, but micromamba should be able to.
Packages are listed under setup-micromamba action already.
This reverts commit 0214c8b.

Updated to download the
mola32.ncfile using a new copy available at https://github.com/andrebelem/PlanetaryMaps/blob/v1.0/mola32.nc. Courtesy of @andrebelem.Also updating the JupyterBook build CI to install from the
conda-lock.ymlfile instead ofenvironment.ymlto reproduce the old environment from 2022. Needed to switch fromsetup-minicondatosetup-micromambafor this.
