This is the first document in a new "user guide" section. This PR does not create proper access to the user guides - there needs to be a prominent link from the Community page.
The support team has many "how to" documents and support guides that will be able to come into this structure in the future.
For now, I've captured these rough notes so that I don't forget how got multi-tenancy working. Goal is to flesh this out more at a later date, especially with the notes on Admin API and Swagger.
