Kubb is a more supported and reliable way of generating types from
OpenAPI schemas. Switching to that to fix the issue reptapog had
with Date requirements. However, we determined that dates should indeed
be parsed as strings, but still kept the switch to Kubb.
Also contains the fix for the notifications type.
