Write central docs for simulations

It would be good to have centralized docs for simulating the beamline (including install instructions)

minimally top level instructions for how to install and run a simple setup for xpdSim. Then pointing to xpdAcq docs. Later, we can make a few better step-by-step tutorials in xpdSim itself. The target audience here is new users to the beamline learning the control software BEFORE they arrive, but with minimal handholding from us. S
