This looks great! I'd like to get this running completely offline (my network does not allow IoT traffic to reach the web).

Have you experimented with this at all? Either by spoofing the cloud service or by talking directly to the wifi bridge via its Ethernet device?

I think with a little modifications you could post directly to the wifi bridge. iirc, the payload we post to the IoT endpoint is forwarded mostly as-is directly to the bridge.
