Converting docx, xlsx, and pdfs in files/ folder into markdown files

Any chance we can convert those into markdown files rather than the docx etc? So we can put them more easily on the website?

I'll put a note to talk to Lotte after the summer holiday about this. She has many files that she frequently updates and commit to github. I will ask if this will make sense for some of the files to convert to md-files.
