Idea: Move simulating functions into package and use them to dynamically make fake data

Rather than have to build the .rda datasets, maybe move the functions from data-raw into R and make them exported functions. So we can add options to generate different sizes of datasets, whenever we want to test larger dataset sizes on the code for profiling.
