Symlinks created in Linux containers are not accessible in Windows hosts due to a WSL limitation: microsoft/WSL#12250

The certbot authors do not plan to introduce a workaround themselves (https://community.letsencrypt.org/t/why-does-certbot-use-symbolic-links-do-certain-paramaters-overide-this-behaviour/27966) so we would need to do it ourselves.
