[RFE] Provide ability to configure the rag content documentation

This script https://github.com/road-core/rag-content/blob/main/scripts/get_ocp_plaintext_docs.sh in the image https://github.com/road-core/rag-content/blob/main/Containerfile#L23 currently allows only openshift docs for the rag content.

We are looking to adopt the road core service for a RHDH plugin and it would be awesome to have this configurable, so that we can feed in RHDH docs via some configuration

Describe the solution you'd like
Ideally we should be able to provide the rag content via some configuration, or have the ability to override the default openshift docs

Describe alternatives you've considered
Not tested it yet at the moment, but probably building a custom image with the RHDH docs as the rag content
