Hello,
I am looking to secure access to data in a geopackage that contains sensitive data accessible offline. A first idea would be to create roles via the SQL console as you can do with postgres. One could then imagine a secure access by proposing to enter the id and password to connect to the geopackage at the time of loading the data in a client like QGIS and also reflected in QFIELD...
The other solution would be to secure the zipped file with a password but unable to read information in the QGIS/QFIELD client. If you have other ideas I’m interested. Waiting for your return,
Best regards

There are proprietary extensions to SQLite (licenced by the SQLite authors) for encryption, but nothing standard & open source. Encrypted zipped GeoPackage would probably be something that makes sense, although working with GeoPackage can involve creating temporary files that could leak sensitive content (if access to the device by other parties is a "threat")
