Use ethers v6 in JS Ethereum Wallet plugin #32

The JS Ethereum Wallet plugin is using v5.7.0 of ethers: https://github.com/polywrap/ethereum-wallet/blob/main/implementations/js/package.json

This can lead to a type mismatch for users who are using ethers v6. We should start using ethers v6 in the Ethereum Wallet plugin.
