Strip UTF-8 BOM bytes encoding from tracked files across git history

Converts UTF-8 with BOM to UTF-8

git-filter-repo --refs <branch> --replace-text <(echo 'regex:^\xEF\xBB\xBF==>')

Can be tested on a fresh <test_branch>.
And if you mentally/cognitively prepared to apply the command on the whole (damn) repository - remove --refs <branch> option.
