Installer not working on Windows when trying to install into directory with "special" character

This must be escalated to upstream, but I want to document it here.

During a workshop today, the installer didn't finish on a Windows PC. Turned out that apparently Mamba couldn't handle the fact it was requested to unpack our distribution to the user directory (this location is the default setting) that contained a non-ASCII character. No helpful error message, it just didn't work. Reproduced from the command line via Mamba installed from Mambaforge: packages couldn't be extracted. Haven't tried conda.
