Update look and clarity of documentation

The readthedocs documentation was made back in 2015. The style is outdated and there are way clearer templates from sphinx (see e.g. numpy or scipy docs).

For the next milestone, we should update:

• The looks to something more modern
• Restructure and update the tutorials
  ...
