Hi!
Thanks for showing interest in the Lago project.
I think the best way to start checking it out will probably be to go over the examples in the documentation [1] and possibly do the latest Lago workshop held in PyCon IL 2017 [2].

In terms of the 'lago demo' project, it's actually a specific feature of Lago, which allows you to instantly run a pre-existing environment which was previously brought up by Lago, I believe the easiest way to check it out will be check out 'oVirt Orb' which is the first project who used this feature, it allows bringing up a new oVirt env in a few mins, its still in tech-preview and wasn't released yet, but passed initial testing, so you can try it out, the documentation is here [3].

Having said all that, we do need to create a video explaining how to use Lago in general, any specific use case you're interested in?
