Nwm I just found it.

Open video2x.yaml in a text editor -> search for "video2x_cache_directory" -> replace the "null" with the folder path that you want to use as a temp folder.

I feel embarrassed to admit that I spent more than 30 minutes reading through the yaml file. :p
