Hello, is it possible to stretch down the right column to display more than 7 pastes or is the "my pastes" section located once logged in to the site?

you can but I would advise against it as would create alot of white space. But you can edit the theme and place it in a stretched column, or include archives.php in the footer and disable the Recent Pastes column, My Pastes only displays when signed in.
