Missmatch idempiere 11 folder

currently, idempiere 11 version is located in 11-release folder instead 11. need to rename the folder to match with the readme info so user can refer to idempiereofficial/idempiere:11 intsead idempiereofficial/idempiere:11-release

I suggest restructuring the repository. On the official website only one version is considered stable and all previous versions are marked as archived. If we can switch to a single folder for this repository and use version tags for release we can replicate that setup while still maintaining previous versions. Suggestions to improve this:

If we want to preserve archived versions:

1. Remove all version folders and maintain one Dockerfile. Use the Dockerfile for the oldest version we want to maintain and assign a tag for that version
2. Keep replacing the Dockerfile for each version and assigning tags with the last tag being v11

If we don't want to preserve archived versions:

1. Remove all version folder and maintain one Dockerfile for the latest version and tag it v11

We can also add a short checksum to each release to maintain stability of the releases and prevent any surprise bugs from affecting production systems
