I successfully ran pgn2epd and say the outfit epd in the terminal. I was a bit surprised the epd wasn’t written to a file. What do I do next to run the analyze and stats scripts?

Both pgn2epd and analyze.py write to stdout which can be convenient e.g. for testing purposes. Usually the output should be redirected (>) to an output file. The three scripts should be run in order as described in the readme since they depend on the respective previous script's output. Since the scripts use argparse, you can always call the scripts with --help to get more information on required arguments.
