I got this working using the holepunch Dockerfile template and posit package manager as a repository fixed to yesterday's date: https://mybinder.org/v2/gh/Infectious-Disease-Modeling-Hubs/hubEnsemblesManuscript/binder?urlpath=rstudio

However, this would only fix the versions of CRAN published packages, not GitHub repository package versions.

As such, I still recommned using renv to fix dependencies (see #27) which will also capture an exact version of GitHub packages also
