Custom formatter plugin

We are looking to provide multiple file types from the same endpoint. We are looking into creating different formatter plugins to provide formatting from our custom provider plugins into the different file types required by our API. Is this beyond the scope what formatter plugins are ment for? And how do we include a custom formatter plugin in our pygeoapi-config? I can't seem to find any documentation regarding this.
