Best configuration for Eufy 2k Wired Doorbell

I'm trying to get the 2k wired doorbell camera stream working consistently.
Following the readme exactly, I have a great feed to the doorbell. But when I return to home assistant later, I'm hit with various errors such as no video etc.
Toggling the P2P stream command doesn't fix it either. Usually I need to restart Eufy and WebRTC integration for the video to return.

Before I go raising these as issues, I'd love to know am I doing something stupid regarding the 2k wired doorbell if anyone can help me understand.
