feat: add awesome projects docs page

• Added an "Awesome Projects" docs page.
• Updated the sidebar to collapse large sections by default.

Enhancements to navigation:

• docs/.vitepress/config.ts: Added a new link to the "Awesome Fedimint Web SDK" page in the top navigation bar.
• docs/.vitepress/sidebar.ts: Updated the sidebar configuration to include new sections and ensure certain sections are not collapsed by default. [1] [2] [3] [4]

New content:

• docs/core/FedimintWallet/index.md: Added an info block with a link to the "Getting Started" guide for the Fedimint Web SDK.
• docs/core/dev/awesome.md: Created a new "Awesome Projects" page listing various projects, resources, and tools built with the Fedimint Web SDK.
