Improve monorepo release strategy

Right now I have to do a lot of manual work to release new versions and often need to manually update multiple packages at once. The release process needs to be either very easy or automated by CI tools. The project is currently moving fast so the former is best at the moment. Goal is to have a reliable source to rollback releases as needed. The project has many moving pieces.
