Upgrade derby version

When upgrading the drivers, we need to make sure that existing profiles will open with new version. If we face a problem, think about a mechanism to upgrade the existing saved profiles to be compatible with newer drivers.

Derby has been identified to have a medium severity known CVEs vulnerability, hence upgrading it is a good idea.

We have also ignored it from dependabot upgrades, reinstate that as well, once we are sure.
