Consider migrating package management to uv #221

uv is a new fast package manager, which is quickly gaining traction as the package manager of choice.

Additionally, Poetry (current package manager) major version 2 is now out, which brings many breaking changes - the amount of effort to migrate to Poetry 2 might be similar as migrating to uv

Consider migrating from poetry to uv.
