In the Classic Editor, it's possible to directly edit custom fields when the post type supports custom-fields:
This UI lets the end user edit any custom fields except those prefixed with an underscore (e.g. _hidden) and those storing serialized data.
Gutenberg disables all Core Metaboxes, including the Custom Fields Metabox.
