QA: Investigate the need for generate_schema_name

Coming from Using dbt with CrateDB, we are adding the details about generate_schema_name to the documentation instead of into the dbt-cratedb2 package.

However, @hlcianfagna mentioned at crate/cratedb-guide#151 (review):
