Write unit tests for coordinator for multiple chains and clients

The current set of unit tests in the sidecar for the coordinator is only running a single attester for a single chainID and clientID. We should set up the coordinator with multiple configurations and run them all concurrently (like the single one is doing now) and verify that it works as expected and that we can fetch data as expected.
