Do we want to have different meeting times for winter vs summer UTC time changes? #87

Coordinating meeting times is hard!

Especially during bi-annual time changes, which do not occur at the same date globally. 😅

Do we want to list different meeting times for summer UTC and winter UTC?
Or leave as is for now and adjust as needed in the future?
