Maybe also use structural topic models.

Did you have a specific coherence metric in mind? Or just PMI?

Not particularly. This comes to mind but I'm not sure if it is easily implemented in R for the standard output from topicmodels::LDA()

Use topicdoc to calculate topic coherence. It implements Mimno's algorithm, and works natively with topicmodels.
